The recipe for the Comtois galette

Ingredients

  • 250 ml of milk
  • 70g sugar
  • 70g butter
  • 140 flour
  • 4 eggs
  • 3 tablespoons of orange blossom water

Recipe :

  • Preheat oven to 180 ° C.
  • In a saucepan, bring the milk to a boil with the sugar and the butter cut into pieces.
  • Remove from heat, add the flour all at once and stir vigorously until a ball of dough forms that pulls away from the sides of the pan.
  • Incorporate the eggs one at a time, including the white of the fourth egg. Mix well between each addition. The yolk of the fourth egg will be used to glaze the pastry before baking.
  • Add the orange blossom water and mix again.
  • Pour the batter into the previously greased mold.
