A day in the great outdoors awaits you as you depart from Saint-Hippolyte. The outward journey includes a beautiful hike through varied landscapes. The return trip offers a change of scenery and mode of travel: you'll return to Saint-Hippolyte by canoe on the Doubs River.





Bread, sausage, comté cheese... why not start by shopping in the small shops of the charming town center of Saint-Hippolyte?! Because lunchtime is picnic time!
Once your backpack is packed, you're ready for a hike along the GR5 and the Grande Traversée du Jura route, heading to Soulce-Cernay. You'll walk towards the Roche Cave, which would be a shame not to visit. Allow a little extra time for this short detour (1,5km round trip), you won't be disappointed...

Hiking : Follow the GR5, marked red and white to Soulce-Cernay.

Whether along the hiking trail or upon arrival in the village of Soulce-Cernay, you'll easily find a place to settle down for your lunch break. Typical local smoked sausage, bread, and the essential Comté cheese – you'll have all the essentials for a local picnic, freshly picked that very morning.
The return journey promises to be refreshing on the lively waters of the Doubs. Aboard your canoe, enjoy the beautiful scenery and the pleasure of this gentle trip down the river. Sometimes calm, sometimes brisk, it's a pleasant nautical route that will occupy you for a good part of the afternoon. The arrival in Saint-Hippolyte is also very pretty.
Back on dry land, enjoy the lively town of Saint-Hippolyte, sit down on the terrace with a refreshing drink.

After this beautiful invigorating day, it is time to reach the heights of Pays Horloger, direction Fournet-Blancheroche. Away from the village, the comfort of a very beautiful guest room and a good meal made with local products await you. This 16th century farm, astonishing for its history and its architecture, with its stone chimney (What is a tuyé? Answer on this link), also houses the owners' organic farm. Beautiful, tastefully furnished rooms, a beautiful location and view, and an inn where you can enjoy farm produce—this promises a most pleasant and restorative break.

A must-do for those who love thrills! The Echelles de la Mort site is renowned for its via ferrata. Rather technical, this via ferrata promises a magnificent view of the valley. Rope bridges, overhangs, ladders, and finally, a beautiful zip line. Via ferrata can be practiced independently with equipment suitable for experienced climbers. Beginners should be accompanied by a guide to enjoy it safely.

Lunch break at L'Etang du Moulin. A calm and relaxing setting, far from the hustle and bustle. Bistro or fine dining? The Michelin-starred restaurant offers a bistro-style dining room with a delightful terrace.
Path : Allow 25 minutes by car to reach the restaurant
To continue this day in the great outdoors, head to the edge of the pond for a walk or a hike, depending on your fitness.
Start time : Parking lot for the Etang du Moulin restaurant. Yellow and blue markings.
For the walk, follow hike no. 49 “Tourbière des Creugnots”, 3 km – 100m elevation gain – approximately 1h30.
For the hiking version, follow hike no. 44 “L'Etang du Moulin”, 9,5 km – 100m elevation gain – approximately 3 hours.

Well-seated in this restaurant which will allow you to taste the cuisine of chef Stéphane Taillard, both local and creative!
Destination : Les Fins, restaurant at the Heart of Hunger.
About 20 min by car.

This beautiful, tastefully renovated Franche-Comté farmhouse exudes warmth and conviviality. It's becoming increasingly rare on farms, but the tuyé is still in place and active here! A great opportunity to taste local products, smoked the traditional way.
Destination : Bed and breakfast La Carrée, in Frenelots, Les Fins.

The final day of this sporting stay includes a mountain bike outing along the Franco-Swiss ridges.
Mountain biking excursion in the hills above Montlebon, near Gardot. Enjoy a guided outing tailored to your skill level, perhaps even with an electric mountain bike. Equipment rental available.
