Why are local cheese dairies called “fruitières”?

There is no question of abandoning this term of fruitière which so well embodies making the soul of this cheese. A dairy symbolizes the fruit of the work of farmers who pool their milk production, the work of the cheesemaker who transforms milk into cheese, and that of the refiner in his cellars who patiently works each wheel to enhance its aromas. 

The "Fruitière" is the workshop where producers gather their milk to make it into Comté cheese. This cooperative village organization was born 8 centuries ago. The values ​​of solidarity and sharing are the soul of this cheese.

The County was born in the Jura massifIt is in this mid-mountain terroir that the Montbéliarde and Simmental cows will produce this characteristic milk. It is necessary 400 liters of milk to produce a wheel of Comté cheese which will weigh around 40 kg!

Each dairy collects milk within a maximum radius of 25 km. This rule allows for the preservation of a multitude of vintages. Pays Horloger, 18 fruit dairies are distributed across the territory.
